I may have gone a little over board with my latest bake off in preparation for the Easter long weekend..
Here are my Bunny In The Hole Cupcakes!
I hope this gives you all some inspiration to get cooking for Easter. Feel free to share your Easter wares.
Now do I have one very simple and healthy little pasta dish for you!
Try my spaghetti with broccoli, garlic and chilli.
400g dried spaghetti
5 garlic cloves thinly sliced
1 head of broccoli cut into florets
1 red chilli, deseeded and thinly sliced
Juice of 1 lemon
Extra virgin oil
Sea salt and pepper
Per the spaghetti packet instructions cook until al dente in salted water.
In a medium frying pan, heat the olive oil and add the garlic and chilli. Cool until chili is starting to brown, then add the broccoli and a splash of water, salt and pepper. Then place the lid on and steam for 2mins.
Meanwhile drain the pasta. Maintain some of the salted water. Add the pasta to the frying pan and stir with the vegetables. Add the salted water to give a saucy texture. Check seasoning and serve with a glass of crisp white wine.
Yes, it’s that simple!

Well that was a jam packed weekend!
I kicked the start of the weekend (Friday night, 7pm once the little ones were tucked up in bed) with a G&T and my baking hat donned and some funky 80’s tunes in the background. Ahh..shoulders down and relax….
I decided to whip up some super scrummy salted caramel cupcakes from the new Hummingbird Bakery: Home Sweet Home cookbook . Oh geez!! They were amazing!! I may have overdosed on the frosting though..
We kicked off early on Saturday and had our baby group around for a champagne breakfast while the kiddies played around the house. Annabel was loving playing and showing off her toys to her buddies. Thankfully they all came despite having to trek through the snow. Yes.. Snow in March! So much for spring..
Sunday was another early one with me off to take a portraiture shoot. I’m still editing. But I’ll share the results soon. I’m pretty pleased with how they’re came out. : ))
Then off to the Columbia Road Flower Market in the snow to get some VERY fresh air to check out the flowers then off to a nearby pub for a cheeky ale. Note to self- go back when I can feel my fingers again..
In all, a good weekend with good company and good food. Makes me very content.

I’ve got some smoked haddock fillets that are fast approaching their stinky phase.. Hmm??
A quick google and I find this awesome Jamie Oliver recipe for Kedgeree that I’ve never tackled before. It’s simple, fresh and healthy. Check it out folks! An easy Monday night dinner and could be used with any poachable white fish.

I’m feeling pretty happy today. So on that note I’m only going to share the weeks fashion ‘wins’.
This has inspired me clear through my cupboards, take a trip to Goodwill and book in some hardcore shopping this weekend!
